Cajun Shrimp Scampi – Video

Cajun Shrimp Scampi is the perfect summer meal. It is light, refreshing, and better than that, it just tastes absolutely delicious!

Ingredients

  • 6 oz. whole wheat pasta
  • 5 tbsp. butter
  • 2 tbsp. olive oil
  • 1/2 cup onion – chopped
  • 3-4 garlic cloves – minced
  • 1 lb. medium shrimp- peeled, deveined and thawed
  • 1-2 tbsp. Cajun seasoning
  • 1/4 cup water
  • 1/4 cup apple cider vinegar
  • 2 tbsp. lemon juice
  • 1 tbsp. fresh parsley – chopped
  • 1 tsp. green onion – chopped

Instructions

  1. Cook pasta according to package directions.
  2. Preheat pan.
  3. Add olive oil then add butter until melted using a low-medium heat.
  4. Add onions, garlic and Cajun seasoning.
  5. Cook approximately 2 minutes until onions are tender.
  6. Add shrimp and cook approximately 3 – 4 minutes, stirring occasionally.
  7. Stir in vinegar,water, and lemon juice.
  8. Cook another 2-3 minutes.
  9. Transfer shrimp to a platter and pour the liquid over shrimp, sprinkle with fresh parsley/green onions and serve.

I’m definitely going to try this recipe. It looks so good and easy and I doubt it’s too high in calories.

Amy, I really enjoyed watching this. I watched it with my daughter, Ellie, your video and other another on swords (at Vision Forum) were loading slowly on the computer we were using so we were going back and forth between them. Ellie was saying, “Back to Cajun Chicken with Amy Bayleaf.” It was so cute, I almost didn’t correct her. I do think Amy Bayleaf is a good chef’s name. :) Anyway, she said she would try the Shrimp Scampi if I made, but at the end, she said it looked like it needed some cheese. LOL! That’s my daughter! If my hubby will agree to try it, I’ll have to make it…or wait till I’m getting together with some other ladies and make it then.
