The other day I was on Facebook and I noticed, Jessica Landry, a dear friend of mine and her kiddos had posted about making popsicles from pickle juice. Well, I got all excited. Not because I wanted to try them. No, no, no. I don’t eat pickles. bleh. My boys on the other hand obviously lack potassium or sodium or something because they crave pickles. I thought for sure they would love these.
The first batch I made was a bomb. It was funny though because they ate them up anyway. Boys are weird. They ate the things because of how bad they tasted. They would get a good lick then you could see the “ugh” come over their faces as they became all distorted. Strange beings, they are. Anyways, I asked what they didn’t like about them and they said they didn’t taste that much like pickles. Hmmm…
Next try I did something different. I actually juiced the pickle in my juicer. It does have a different taste. I was shocked. I took that juice, added some of the pickling juice and some water and made the popcicles again. This time they loved them!
Picklesicle Recipe
- 7 large pickles
- 1/4 cup of pickling juice (from pickle jar)
- 1/4 water
Juice the pickles with a juicer or blend them in the blender. If you use the blender you will have to strain the juice to remove seeds and pulp. Add the pickling juice and water to the juice from the actual pickles. Fill popcicle molds or Dixie cups with the juice. Freeze overnight.
I’ve read that pickle juice actually has lots of healthy benefits. My grandma eats them to ease her leg cramps. I’ve also been told they are good when you are feeling dehydrated. I think we’ve found a new snack to add to our growing repertoire. Thanks, Jess!

I want to know if these are sweet or dill. Either way, I just can’t imagine. I love pickles, and I’ve even drunk the juice. But frozen? Hmmmm… I’ve learned never to say never, but these do sound awfully weird!

At first I thought, “Disgusting!” but then I started thinking about how a really good dill pickle tastes so great and makes your mouth water just imagining it. Maybe it’s worth a try!

What kind of pickles do you use? I would think sweet pickles might taste okay, but… really wondering what kinds everyone else is using. Pickled and fermented foods are awesomely healthy. I wonder if I could get my hubby to try these in place of sports drinks when he plays tennis ( he doesn’t like pickles, but I could try).

This is one of my all time top fundraiser sales items at high schools. Just put a little pickle juice in a little paper condiment cup and freeze, ‘pickle poppers’ is what we called them. The kids eat them like crazy and I always sold them easily for a quarter or more each, that plus they love to buy the pickles too!
OH MY WORD! I say ICK, but my Ladybug will be in HEAVEN! She not only loves pickles, but LOVES making popsicles.
